Roscommon students showcase their ‘Easy Eats’ cookery book

Rebecca Trimble and Emma Hoey from Roscommon Community College represented the county at the Foróige Youth Entrepreneur of the Year Awards 2026.

Two students from Roscommon Community College represented the county at the Foróige Youth Entrepreneur of the Year Awards 2026 at Croke Park, Dublin.

Rebecca Trimble and Emma Hoey showcased their business, Easy Eats, a beginner friendly cookbook filled with fun, simple recipes designed to introduce children to cooking. Alongside over 20 recipes, the cookbook includes games, activities and practical cooking tips to keep young people engaged.

Every recipe has been tested by the team and younger children, helping build confidence, independence and enjoyment in the kitchen from an early age.

Wayne Travers, chairperson of Foróige, commented that the day was "a brilliant reminder of just how talented, creative and driven young people are. What we’ve seen isn’t just entrepreneurial skill - it’s confidence, empathy, resilience and ambition. Foróige NFTE gives young people the chance to believe in their ideas and in themselves, and that can have a lasting impact far beyond business. Every young person should be incredibly proud of what they’ve achieved.”
